(For coverwifeoftim) Sorry it took me awhile, been having a very busy week.
I thought I would post the plum jam recipe here than it wouldn't be
missed. I follow the Pomona's Universal Pectin. With this
pectin you can use sugar or honey and as much or little as
desired. The following is for 4 cups of cut/mashed fruit.
Depending on the fruit, I usually use a little less than half.
say I have 20 cups of fruit, I'll use 8 cup sugar.
4 cuts mash fruit or pitted/cut up
1-2 lemons or just use the lemon juice. About 1/4 cup needed.
3 t pectin powder
4 t calcuim
I will measure out the sugar and add the pectin 3t pectin powder
and the 4 t of calcium I add to the fruti mixture. (help
the pectin gel)
Pit and mash, although I found the plums hard
to mash, but while cooking they become very loose anyway, so the mash
is not necessary. Bring to boil, add sugar or honey and stir
well, bring back to boil and then put into jars and steam can for 10
This is the only pectin I have ever used, so if you buy it it comes with recipes for many jams and jellies.
