Red Cabbage Salad
We just had this for lunch today and it was so delicious! It is a pleasant change from our usual green salad. I just shred the red cabbage in our food processor. Empty it into a bowl and then dress it with lemon juice, oil and salt. I used just over half of a small/medium cabbage head, one whole lemon, a few squirts of oil and salt to taste. So fast and simple, yet so delicious!
