Bread Baking Plus Recipe

Martha asked for my bread recipe a couple of weeks ago, so I thought I would just share it here for all to see, if you are interested.       Sorry for the delay, Martha. 

Whole Wheat Bread
 (sponge)
5 c. warm water
1/2 c. oil
(I use olive oil, not extra virgin)
1/2/ c. honey
3 T. yeast
1/4 c. lecithin
2 eggs
7 -8  c. w. w. flour
——
2 T. salt
15-16 c. w.w. flour

When I make bread, I vary from using 100% whole wheat to sometimes adding a few cups of white flour.

Add first 7 ingredients in Bosch mix well (speed 2) and then let sponge rise 3 times.  I let it rise just till it is reaching the ridge part in the center of the bowl.  When risen just turn to M (on Bosch) for a minute then let rise again.  Once done 3 times turn to speed 2 and add salt and remaining flour.  With the flour you just keep adding until the dough leaves the side of the bowl clean.  Let knead on 2 for 10 minutes.  I will add a sprinkle of flour if dough is starting to stick to side of bowl.

Take dough out of bowl and shape into loaves, I like big loaves, so cut dough into four pieces.  Shape into loaves and place into greased loaf pan.  Once all are in pans, place into oven to rise for 30 minutes. 

 This is how mine look when I first put them into the oven.

When that is done, turn on oven at 400F. and set the timer for another 30 minutes.  When timer rings the bread should be done and ready to take out of oven. 


If you like soft crusts, butter top of bread right away and leave in loaf pan for a few minutes, then remove and let cool.


Bread making has been something I have done since I was child.  Back then it was all done by hand and once my mom taught my friend (she was living with us at the time, & another interesting tidbit… she is now my sister-in-law… dh’s sister) and me how to make bread, that was our weekly chore.  We had to knead it for 30 minutes.  We always found that to be the longest 30 minutes ever!!  But once again I’m thankful to have been taught how to bake bread.  It is something that I will soon be teaching my girls, I think I’ll teach them both ways, by hand and with the Bosch.   

I have good memories of bread making and I hope one day my girls will too.

  1. Oh, your beautiful, beautifl bread! Why is bread so pretty? Is that possible? I think so! Im going to have my daughter try your recipe also. We have gone through many, many recipes & finally found one we love. It is called, "sandwhich bread." Its 100% whole wheat & its so nice. It slices nicely too. Our oldest, Michaela makes 6 loaves a week. It involves a bit of work though. A much more involved recipe than the others we have tried. I grind my own wheat when I can & I too have a Bosch. There is no life without it! Would you agree? Your bread is just gorgeous. Such pretty color.

    Now about the tagging. Im confused, Im sorry. I dont know how to link. How do I do that? I guess you picked the wrong person Im afraid. I have no idea what Im doing. None of my website links work either.

  2. What's a sponge? I thought you were going to use it to clean up with. (honest) Did I miss that?

    I never baked bread…except corn bread lol.

  3. I have been thinking about the Bosch, everything I hear has been wonderful, I have a large family and feel like the investment would be well worth the cost, any priases or "pouts" about it would be appreciated!

  4. I hope I can become more consistent at baking bread. I believe there is nothing better than to come into a house that smells like freshly baked bread, and it's a memory I'd love my girls to have of home. They say that smells trigger more memories than any other sense.

  6. Making a sponge are the first 7 ingredients and allowing it to rise, before adding in the salt and rest of flour. I'm not sure how to explain it. Anyone have a better answer???

    As for the Bosch, it is wonderful, I do really like and it it sure cuts down on the time it takes to make bread. Plus the bread is lovely! I can't think of any cons… I've been quite happy with it!

    And yes, there is nothing like smelling the aroma of fresh bread. 🙂

  7. Do these loaves have any white flour in them? Also, what kind of oil do you use? I have found that Olive Oil is too strong for us.

  8. Yes, this bread did have white flour, but only about 4 -6 cups. I can't remember… I vary it and when it is 100% w.w. flour it still turns out really nice. 🙂

    For oil, I do use olive oil, not extra virgin.

  9. Thanks for asking, I have not really thought that far seeing they are only 5 and almost 3. But I think I will. 🙂 It would be good for them to know, just like teaching them how to do things around the house. 🙂

  11. I'll have to try your recipe in the near future. Since we've switched to grinding our own grain we've had to be a lot more precise in our bread making to get it to come out right. I never used to add anything like wheat gluten or soy lecithin. After reading your recipe Lee and I left the salt out until the end and it made such an improvement!

I've thought of it over the years and I really like how big your loaves come out – and how yummy they look!
